Diabetic Recipe: Spicy Cheese Popcorn
Love the crunch of popcorn? Enjoy this tasty version. It provides abundant insoluble
fiber to help with digestive health.
Prep Time: 15 minutes
Yield: 8 servings
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/8 teaspoon garlic powder
- 12 cups air-popped popcorn
- Nonstick butter-flavored cooking spray

In small bowl stir together Parmesan cheese, cumin, chili powder, salt and garlic
powder. Set aside.

Spread popcorn in even layer in shallow baking pan lined with foil. Generously spray
with cooking spray. Toss. Spray with additional cooking spray, tossing until popcorn
is lightly coated. Sprinkle with cheese mixture. Bake at 350° F for about 5 minutes
or until heated through.
